Homogenised milk

The quality of milk and the degree of its technological processing can be very different, which can adversely affect the process of digestion, absorption, metabolism of milk protein and fat (Van Lieshout et al 2020).

Few people know that almost all milk goes through the technological process of homogenization (HMG), which became widely used in the 40s of the XX century. As a result of pressure in special devices, the fat globules are split into smaller ones. This makes the milk homogeneous and does not allow to create cream on the surface. BUT this manipulation changes the structure of milk fat as well as milk protein.

In one study on mice, HMG milk caused an allergic reaction (Poulsen et al. 1990). Another study on mice and children has also associated processed milk consumption with an increased risk of allergies (Abbring, 2019).

According to the legislation of the European Union, there are no requirements for specifying HMG milk on the label. There is only a requirement to state a method of heat treatment (pasteurized, sterilized, etc.).

In Europe, there is a special biodynamic organic label "Demeter" in which homogenization of milk is prohibited!

Despite the lack of a large number of good quality studies and conclusive results, you can try non-HMG milk and track symptoms, especially if you notice symptoms of food intolerance to ordinary "store" milk.
